JOB TITLE: Chef

LOCATION: Moonbeam Lodge and Saint. Bernard’s Restaurant
CLASSIFICATION: Full-Time/ Seasonal/ Hourly
POSITION:
Solitude is looking for a passionate and creative chef to provide our restaurant with high-level standard recipes in order to give customers the best recreation and dining experience. The chef is responsible for using their culinary expertise to create appetizing dishes for diners to enjoy. The chef runs and oversees kitchen operations and leads with great communication skills and impeccable time management for maintaining and enhancing customer satisfaction. SPECIFIC JOB REQUIREMENTS:
Five years of kitchen experience working as a Chef or Kitchen Manager
Formal Culinary Training/Degree preferred
Thorough knowledge of line equipment and kitchen equipment and operations, including uniforms, linens, etc., for both FOH and BOH
Proven ability to manage food costs and stay within necessary budget
Extensive experience in projecting and maintaining food and labor costs
Excellent communication skills and ability to hire, train, manage and work with all FOH/BOH staff
Experience in working as an “Expediter”
Creativity and ability to assist Food & Beverage Director in menu development
Food Handler’s Certification
Requires occasional lifting to 50 lbs.
JOB DUTIES AND RESPONSIBILITIES:
Hire, train, schedule, and manage kitchen staff to ensure proper coverage and see that all responsibilities are being met
Work directly with kitchen staff, Bartender, FOH Staff, etc. in ordering necessary products for restaurant
Thoroughly price and source the best product possible for the best price possible
Work directly with suppliers, purveyors, and representatives to make sure orders are placed when necessary to avoid food service interruptions
Receive all orders to ensure items are in order and properly stored in dry storage, walk-in, freezer – ensuring proper rotation as well – keeping the kitchen and all storage areas clean and organized
Coordinate and ensure linens, rugs/mats, uniforms, etc. are consistently ordered and delivered when needed
Communicate regularly with FOH staff regarding service, menu details, special requests, customer needs, etc.
Work as the liaison and Expediter during service to manage the window and communications between FOH and BOH
Provide excellent customer service to guests by checking in with their table to ensure they are satisfied with their meal and service
