We are looking for a talented Culinary Supervisor to join our Brookstone Estates of Effingham Team!

• Know each resident and their family by spending time getting to know them.

• Encourage, coach and support team members to inspire compassionate performance and affirm the positive difference their work makes in our customers’ lives.
• Supervise team members’ performance to ensure the delivery of positive, memorable experiences.
• Orient and train new culinary team members to understand the impact of their role and teach how they can create memorable experiences for our customers.
• Schedule, assign duties and provide coverage within the Culinary Department on a daily basis. Post Food and Beverage schedules in an easily accessible location and in a timely manner, generally no less than a week in advance.
• In accordance with the Culinary Policy and Procedure Manual, maintain an adequate inventory of perishable and staple food and supplies, including emergency supplies and substitution items.
• Ensure all meals are prepared per standardized recipes and served in a timely fashion with exceptional presentation, including garnish. Menu items are to be prepared and served at proper internal
  temperatures and records maintained to provide any regulatory agency the information required to ascertain proper compliance with all health and food safety standards.
• Meet customer needs by accommodating and serving substitute foods in a timely manner.
• Maintain all production records, thereby developing an accurate history of items served and meal counts for proper and cost effective production.
• Order food products in accordance with the seasonal rotating menu, occasionally altering preparation methods or items, per the standards, to ensure prepared food meets the needs and desires of the community population.
• Update and display daily and weekly menus, with easily understood descriptors, in a conspicuous and easily accessible location.
• Take the lead as culinarian, when applicable, to assist culinarians or staff when required.
• Ensure compliance with any Federal, State, County or local health department regulations and assuring that all production follows the strict HACCP program.
• Create positive customer experiences by preparing food for and actively support all special events held within the community.
• Adhere to the community’s food, labor and supplies budgets, including having the knowledge and capability to communicate variances in an approved manner.
• Take monthly inventory of all food staples; practice proper and effective food rotation.
• Provide frequent performance feedback and complete performance evaluations in a timely manner.
• Update and correct time records for the culinary team members, including correcting any missed punches and approving and monitoring time off requests in accordance with company policy.
• Maintain all requirements for safety and sanitation within the Culinary Department, including knife safety, food slicer safety, production sheets and monthly self-audits.
• Ensure adherence to cleaning schedules and ensure that safe food handling is practiced at all times using the HACCP system.
• Coordinate and manage the Food Committee composed of residents in the community.
• Attend regular Resident Council Meeting in the community or hold additional resident related meetings as needed.
• Assist in the dining room when required to provide superior customer service to all residents, families and guests.

 Our ideal candidate has the following knowledge, skills, and abilities:

• Must demonstrate empathy and compassion to connect with customers.
• Must be inspired to serve the needs of our customers.
• Must use imagination and creativity to motivate self and others.
• High school diploma or GED. Trade school degree in Culinary Services/Restaurant Management is preferred.
• Five plus years experience working in food service.
• Previous experience managing employees within a food service environment.
• Sanitation License required.
• Extensive knowledge of food preparation for large groups required as well as catering and menu development planning for smaller groups and special community events.
• Sanitation and maintenance of food areas and dining room is required.
• Financial and recordkeeping management, supply and inventory management required.
• Excellent interpersonal, organizational and communication skills.
• Must have the ability to read, write and follow oral and written direction in the English language at a level adequate to perform the job duties.
• Must possess leadership and supervisory ability and the willingness to coach, inspire and supervise other personnel.
• Must maintain and encourage a positive work atmosphere by behaving and communicating in a manner that promotes cooperation with co-workers, managers and others with whom contact is made.
• Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel, and the general public.
• Ability to handle several tasks and respond effectively to unexpected changes, requests and stressful situations.
• Must possess the ability to make independent decisions when circumstances warrant such action.
• Must possess the ability to plan, organize, develop, implement, and interpret the programs, goals, objectives, polices and procedures, etc., that are necessary for providing quality care.
• Must have patience, tact, a cheerful disposition and enthusiasm, as well as the willingness to handle difficult residents.
• Must be willing to seek out new methods and principles and be willing to incorporate them into existing practices.
